I made cream pies with the stove top method for years, occasionally scorching the filling if I turned away for a little while. A few years ago, just for the heck of it, I tried this "technique" and I've never gone back, though it flies in the face of everything every professional baker teaches. I take all the ingredients of the cream pie, milk, eggs, thickener (flour or cornstarch), and chocolate or cocoa if I'm making a chocolate pie, and put into blender. I whirl for a couple of minutes, then pour into my 2 quart Pyrex mixing bowl with handle. I put it in the microwave on 70% power for 3 minutes. Whisk at the end of the 3 minutes, and then repeat this until the filling is the thickness I desire. I then stir in vanilla and a pat of butter (and coconut if it's a coconut pie). I pour the filling into my prepared pie crust, press plastic wrap onto the top of the hot filling and refrigerate. Then I top with whipped cream. If it's to be a meringue topping, I put the meringue on the hot filling, brown the meringue, then cool the pie. Honestly, I know this is baking heresy but this works. It's unbelievably easy, no standing over the hot stove, and no tired arm from whisking. No scrambled eggs. And no scorched filling. Try it.
